Isoflavones (a group of phyto-oestrogens) have attracted attention because it has been observed that the incidence of breast cancer is lower in countries where soya (and its derivatives) is consumed – and in particular the isoflavones that it contains (genistein, glycitein, daidzein).
Soya is mainly rich in genistein and daidzein, which are molecules of isoflavones bound to a sugar molecule. The sugar molecule is broken down by the intestinal flora, resulting in a deconjugated form. In turn, the daidzein metabolises into equol, a substance which has a much more powerful oestrogenic effect than daidzein, thanks to a specific type of intestinal flora. The significance of equol has been discovered only very recently. It has a great affinity for the oestrogen receptors and is a more powerful antioxidant.
Moreover, it seems that the soya matrix has a significant advantage compared to isolated isoflavones due to its important role as a prebiotic since it constitutes the appropriate nutritional environment for bacteria.
